The scanning feature was recently imbedded into the notes app.
To start your scan first place your document on a neutral colored surface. Next open the notes app on your iPhone
Start new note
Tap the camera icon
Tap scan documents
They will auto save in your notes apps and can be emailed / stored as a PDF.
