Fuel your smile and Super Bowl Sunday with this Healthy Chili!

Whoever you are rooting for, this chili is sure to be a hit among your guests.  This chili is truly a balanced meal. High in protein & fiber, good fats (you need ample good fats for oral and whole body health), free of refined sugars, rich in vitamins A and C, and K2.  It’s nutrient dense and full of amazing phytonutrients. This chili packs all the flavor and gets an added health boost from pumpkin purée.

Serves 6-8

Ingredients:

  • 1 lb lean grass fed ground beef
  • 1 tbsp avocado oil
  • 1 onion diced
  • 
3 cloves garlic minced
  • 2 bell peppers diced
  • 3 tbsp chili powder
  • 1/2 tsp oregano
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp ancho chili powder (can omit)
  • 1/2 tsp cayenne pepper
  • 1/2 tsp kosher salt
  • 
1/4 tsp black pepper
  • 
1 cup chicken broth
  • 1 15 oz can black beans
  • 1 15 oz can kidney beans
  • 
1 15 oz can pure puréed pumpkin
  • 
1 28 oz can crushed tomatoes
  • 1 cup chicken broth

Directions:

  • Drain and rinse beans
  • In a large pot sauté over medium heat onion and garlic and bell pepper until fragrant.
  • Add ground beef and brown.
  • Add canned tomatoes,  beans, pumpkin purée and chicken broth.
  • Add chili powder, oregano, cumin, paprika, ancho chili powder, cayenne, salt and pepper  stir to combine.
  • Bring to a boil, cover and reduce to simmer
  • Simmer for 30 minutes or longer to blend flavors
  • Serves with avocado and some cheese if you like!

**This could easily be vegan if you double the beans and use vegetable broth instead!
