Ingredients:

  • 1.5 lbs Chuck Steak (conveniently purchased at M.E.A.T. Provisions Westport!)
  • Salt
  • Pepper
  • Cumin
  • Olive Oil
  • Soy Sauce
  • 16 Soft White Corn Tortillas (6 inch)
  • 8 oz Asadero Cheese
  • 1/3 Cup Fresh Cilantro
  • 1/3 Cup Minced Red Onion
  • 5 Radishes Sliced Very Thin
  • 1 Lime Squeezed

Directions:

Season the Chuck Steak Very Well with the Salt, Pepper, and Cumin.  Brush with olive oil and grill 3 minutes per side on very hot grill. Splash with soy sauce after flipping the steaks. Remove from grill and allow to rest for 5 minutes, covered. Wrap the tortillas in a paper towel and steam in the microwave for 60 seconds. Arrange on a large tray in 8 stacks of two tortillas. Sprinkle the Asadero Cheese on top of all of the tortillas, evenly.  Then sprinkle the Fresh Chopped Cilantro, Minced Red Onion, and Thinly Sliced Radishes. Squeeze the lime juice on top of all of the tacos and serve
